Not sure why I’m feeling compelled to write this morning, but I do.
I had a frustrating situation this morning that left me super annoyed and on top of that I thought it was Wednesday so I frantically ripped all of the sheets off the beds and threw them in the wash to get ready for the cleaning ladies and was in  rush to make sure everything was ready so they could clean…  Glad I’m ready for them them now…  a day early!  haha As soon as I realized it was only Tuesday and started planning for my day, I took a minute to browse through facebook which I haven’t made a lot of time for recently, and was overwhelmed by one friends life, in particular, and am in awe of what the Lord is doing in their life!  I watched this family walk through utter heartbreak and then by the grace of God, there was redemption.  It’s so fun to watch people be completely obedient to the Lord, surrendering everything, no matter what, and continuing to have faith that their suffering has a reason and isn’t in vain.  Sometimes He’s not done writing our story and it’s so powerful.  This family is such a witness and it’s so beautiful to watch.

As for me this morning, I am thankful.  My God is good.  Whether life is good or bad right now, God lives in the peaks and the valleys with us and His grace is sufficient.  My prayer is that I can live the way this family does, clinging to Jesus and praising Him even in the storms.  There is a peace when we sit at the feet of Jesus, knowing we don’t have to endure everything alone.  He is good, He is faithful.  Trust.

 

I have no idea if any of this made sense to anyone, but it does to me and a year down the road I can’t wait to come back and re-read this reminder for myself!

Crockpot Creamy Chicken Fajita Soup

It’s been awhile, once again, but man has life been crazy busy lately.  I know it won’t be slowing down, but I’m soaking it all in and thankful for these 4 babes of ours that keep me on my toes!  Life is more full than I have ever known it, and I’m doing my best to cherish these sweet moments.

Last night I made the yummiest, and easiest dinner!  All of the kids loved it so much that the boys asked if I would put leftovers in their lunches for school!  Haha  Awesome meal for a busy day and you can never beat an easy crockpot meal, right?!  This can easily be doubled when company is over or if you need to drop a meal off for someone in need!  And since yesterday was rainy and overcast…  hot, yummy soup tasted even better!

Crockpot Creamy Chicken Fajita Soup

Ingredients:
1 lb boneless, skinless chicken breasts
2 cans condensed cream of chicken soup (I use Pacific Foods)
1 cup salsa
1 (16oz bag) frozen corn
1 (15 oz) can black beans, rinsed and drained
1 1/2 cups water
1 teaspoon cumin
1 cup cheddar cheese, shredded
favorite toppings (tomatoes, cilantro, sour cream, avocado, cheddar cheese, tortilla chips)

Directions:
Place chicken into slow cooker.
In a bowl, mix together cream of chicken soup, salsa, corn, black beans, water & cumin.
Pour over the chicken in slow cooker.
Cook on low 6 hours.
Shred chicken using 2 forks. (I do it in the pot, but you can also remove and shred, then throw it back in)
Add cheese, and let cook for 15-20 more minutes.
Serve with your favorite toppings (see ingredients list)

Cheesy Potato Casserole

Hiiiiiii!!!!  It’s been WAAAAAYYYYY too long since my last post and I really really miss you all and my little corner of this world wide web!  I miss this space and the community it has brought me.  I miss sitting down and writing and sharing recipes!  I never knew exactly how busy life would be with 4 kids and I wouldn’t trade it for the world, and so my little blogging space has taken a backseat.  I really am going to try and come back to it more often though, as I have had people reach out with questions and what not and I’d love to share more of that on here as it’s hard sometimes to respond to so many individual emails and messages!  Thank you for following along with us on Instagram as that is where I share the most in photos.  🙂

So back to what I came here for today…  I have the yummiest recipe to share with you all and I have had it since high school when I lived in Utah!  It was made at a potluck my junior year and right away I knew I needed the recipe because I knew it would serve a purpose long term and I wanted to make it when I was ‘older!’  hahahaha  It’s one that my whole family loves and it’s an easy side dish to bring to large get togethers so that’s a bonus.  With 4 kids we still always have tons of leftovers and the kids could literally eat this with every meal everyday!  😉  I know it’s summertime but I made it the other night when it was a colder, randomly rainy blustery day and we had it with grilled BBQ chicken…  Everyone loves potatoes!  Keep it in mind for the fall!  I hope you all enjoy it as much as my family does.

Cheesy Potato Casserole

INGREDIENTS:
32 oz bag frozen shredded hashbrowns, somewhat thawed (I use Alexia Yukon Shredded Potatoes)
2 (10 oz) cans cream of chicken soup (can also use homemade)
1.5 cups sour cream
1.5 cups freshly shredded cheddar cheese
1/2 cup butter, melted (I use Kerrygold grass fed)
1/3 cup chopped onions (can eliminate if you want)
Topping:
2 cups crushed corn flakes
2 Tbsp butter, meted

DIRECTIONS:
Pour potatoes into a greased 9×13 inch baking dish.
In a medium bowl, combine soup, sour cream, cheese, the 1/2 cup melted butter and onions.
Blend it into the potatoes.
Combine the crushed cornflakes and the 2 Tbsp melted butter and sprinkle on top of the potatoes.
Bake at 350 degrees for 40 minutes.

It’s been a long week in our house…  Sickness has swept through and hit every person in the house.  Not all at once, thankfully.  But throughout the last almost 2 weeks someone has been sick.  I am tired but thankful…  Thankful that it didn’t hit everyone at once, thankful that we are all generally healthy, and thankful I have a sweet family to take care of and love on.  The days have been long, but they have also been full!  It’s exhausting taking care of sick littles for sure, but I’ve been soaking in all of the extra snuggles and fun we have had at home!  The good news is that the weather has been crummy…  Overcast, cold and rainy so that’s a plus!!  Who wants to go out in the middle of a windy rainy storm!?  Not me…  At least not with 4 kids…  Or even two!  Needless to say, we have needed some rainy day activities so the other night we made playdough.  Kenley was getting antsy and wanted something different to do than her usual ‘painting.’  I don’t keep playdough in the house but decided I would make some with her to see if that would help the ants in her pants!  Meltdown averted…  She’s been hooked ever since and making ‘snowmen’ and playing and having fun with it ever since!  It’s super easy to make and I guarantee you will have all of the ingredients in your pantry.  I have kept it in a ziploc bag now for 4 days and it’s still soft and perfect!

INGREDIENTS:
4 cups all purpose flour
2 TBSP vegetable oil
1 1/2 cup salt
1 cup hot water
food coloring
optional: extracts or young living oils to make it smell yummy

DIRECTIONS:
Set out 4 bowls.
Pour 1/4 cup of water into each bowl.
Add a few drops(3-6) of color into each bowl.
Add 1 1/2 tsp of vegetable oil to each bowl.
Add oil or extract if you desire.  I used 3 drops of Young Living Lavender oil into each bowl.
Measure the 4 cups of flour into a medium bowl and add the salt. Mix to combine.
Pour 3/4 cup of the dry mixture into each bowl and mix well.
If too soft, add a little more of the flour mixture and stir.
You don’t want to add too much at first because it will make the playdough dry, gritty and hard! 😉
Have fun playing with it!

It’s been WAAAAAAAAAAAAYYY too long, but I miss this little space I have and I miss you all, so I really must get back to documenting my little life.  I love being able to look back and see my babies and how they’ve grown and the fun things that we have done…  And I miss chatting with you all.  Glad I still get to see most of you on Instagram though!  🙂

This little gem of a boy is pure perfection!  Yesterday he turned 12 weeks old (where does the time go?) and he is such a joy!  He sleeps 8-9hrs all night long, responds to his name, smiles A L L  T H E  T I M E, and is about to roll over for the first time any day now!  He is the perfect addition to our family and we are all in L O V E!  Kenley is an awesome big sister and loves taking care of sweet Cruzie!!!  I love how much she helps me with him.

Adjusting to 4 kiddos has taken me a couple months but we are back into our routine and I am loving this big family of mine!  It is crazy busy but just plain F U N!!  Never a dull moment and life just feels so right!  🙂

Thanks for the love you all sent after little man was born!  The meals, flowers, notes, phone calls and texts were so kind and we feel so blessed by the love you all poured into us!

Kenley is 2!!!

Today our little precious miracle girl is 2!!!!
Where does the time go and why does it have to go by so fast!??
I feel like she was just born and then I blinked and we were celebrating her first birthday
and then I blinked again and here we are a WHOLE.YEAR.LATER!!!

She brings us so much joy and watching her grow is so much fun!
She sprinkles glitter wherever she goes and her smile is infectious!
She beams with spunky personality and is smart, sweet and compassionate!
She loves others and makes friends quickly.
She is a Princess in her own right and I pray she will come to know Jesus at a young age!

I thought I’d always be a boy mom and never gave much thought to having a girl!
I am a true girly girl but I love sports and boys just seemed to fit me…
And then God blessed me with Kenley!
I sure LOVE my boys and am excited for Cruz to be born in just a couple short months but, ohhhh, my Kenley!
She has brought out a side of me that I never knew existed and life just wouldn’t be the same without my girl!
I look forward to watching her grow and creating mommy and daughter memories…
Going to ball games together but also going shopping
and getting manicures and pedicures…  Coffee dates, you name it!
The girl may only be two, but she gets me better than anyone else in the house!
I love her affection and playfulness, her imagination is wild and I hope that continues
and I will continue to enjoy watching!

My world was completely turned upside down two years ago today, FOR THE BETTER!!!
And I thank God for the miracle of my daughter EVERY.SINGLE.DAY!

The mommy and daughter bond is unbreakable I feel so blessed she calls me mama!

It’s been awhile!

IT’S BEEN AWHILE!!!!

The past several weeks have been crazy here…  Baseball is in full swing and hubs and I are often in opposite directions with different kids, along with with the end of of school (I have Cooper graduating from elementary next week————> GULP!!!!) and trying to keep life on track.  WHEW!!!  A couple of weeks ago I had a weird little scare as I was sitting at one of Coop’s baseball games!  I started getting there weird chest pains that turned excruciating and I wasn’t able to take a full breathe…  Needless to say, I ended up at the ER ALL.NIGHT.LONG!!!!  Ugh  Thank goodness isn’t wasn’t something serious, but I had esophageal spasms (which they told me are rare, but feel like a heart attack!).  It wasn’t like anything I’d felt before and it lasted TWO days…  The next day I landed at my dr.’s office to monitor baby boy.  He, of course, was just fine and it was fun to get another ultrasound and get another peek at him!  The kids came with me and they LOVED seeing his little heart beating, along with his lounge ‘frog’ legs, cute little nose, and he was sucking his thumb!  L.O.V.E
That whole experience exhausted me because I was unable to sleep for 3 days and then I got a migraine.  I don’t normally get migraines during pregnancy but you know what they say, each pregnancy is different!  🙁  Not fun at all, and not much I can do for relief…  Tylenol is my last resort and it doesn’t help much…  I just try and have a half cup of caffeine, nap in a cold, fan filled dark quiet room when Kenley is napping, drink LOTS of extra water, rub Young Living Deep Relief all over my temples, forehead, neck and shoulders and put ice packs on my neck and forehead!  Any other advice and/or suggestions are welcome!  It’s been pretty brutal!

I am now almost 17 weeks and besides the migraines and some back pain, I feel pretty good overall!  Allergies…  Thats another story but not related to pregnancy!  The nausea is pretty much gone but I will get the occasional nausea.  Baby boy is growing and looks good and I have another ultrasound in 3 weeks!  I have a definite bump going on and sleeping has already gotten a little uncomfortable.  No more sleeping on my tummy and I have to use my big preggo pillow!  🙂
I found the boys old crib bedding which was fun and realized I don’t really like it and want something different for Cruz!  :-/  I found some bedding I love and I’m thankful we already have a second crib and crib mattress!  Just searching for a more functional double stroller now.

16 weeks

ALLERGIES!!!!!!  I feel like they are about the worst I’ve had ever this season and it doesn’t help to be pregnant and unable to take anything.  I’m super careful about not taking anything unless I’m in utter desperation!!!  I finally took a benadryl the other day which only helped for a couple of hours.  We live backed up to a wooded area with some serious cottonwood trees that grow along the creek.  Totally miserable!!!  Kelley and I LOVE playing outside everyday and by the time we come in my eyes are almost swollen shut and I can’t stop rubbing my eyes, sneezing and blowing my nose.  I literally have gone through a box of kleenex a day and joke to Paul that I’m keeping the tissue companies in business!

We just got Kenley some fun outdoor toys and it’s been a blast!  We got her a Little Tikes Car that she loves ‘driving’ around, a cute little fun wiggly worm sprinkler that sprays in all directions, a bubble maker that makes her run in circles and giggle, and a water table that she loves to play in…  and also try to climb into!  🙂 I think it’s time to get her a small little pool also!  😉 We are looking for a small play structure and/or a little playhouse!  She is like the rest of our family and LOVES playing outdoors!  It is so much fun watching her grow and learn and experience new things!  A total joy with the perfect amount of spunk and we all just adore her to pieces!

Boys baseball has been crazy busy…  Literally 5 days a week, at least and it’s been nuts!  It’s really forced me to plan out meals and do one big grocery shop a week because that’s all I have time for!  I love to routine and schedule of school but I have finally gotten to the point of being ready for summer!  I can’t believe that school ends next week and I will have one in middle school and another in his last year of elementary (SOBS)!  I’m telling you, friends…  Especially friends with littles…  The days are LOOOONNNGGG but the years are SHORT!!!  As hard as it is sometimes, savor the moments, all of them!  They are gone in the blink of an eye and you can’t get them back!  Don’t wish for your littles to be older because once they are you will wish them to be small again!  I’m so thankful I have Kenley to still savor these little years and sweet little Cruz on the way!  I love my babies so so much!  I am so excited for a jam packed yet relaxing summer!  Lots of fun things planned.  🙂

Last week I went on a field trip with Camden’s class on the WyEast Canoes!  Holy cow was it fun!  It was an all day trip and I loved every minute of fun and watching my boy interact with his class and have fun!  I love that he loves when his mama chaperones field trips and comes to his class…  He is the most loving, serving, sweetest kid I know and he shows it in every way!  WHEW that boy has my heart!  🙂  <3

This past weekend we had a really fun time as a family celebrating Memorial Day!  Remembering all of those who chose to serve our country and have made the ultimate sacrifice…  I am so thankful to call America my home!  To all of those who have paid the price for us, they will truly forever have my unwavering respect and admiration…  So thank YOU, from the bottom of my heart!

Saturday we went to my parents for a BBQ and spent time as a family…  Relaxing and fun; family is family!!!

Sunday we took the kids, along with one of their friends, down to the last Duck baseball game of the season!  I was AMAZING!!!  UCLA has not lost a series all season long and after 11 innings, we won, and since we won the night before, we gave them their first loss of the season!!!  WHOOP  GO DUCKS!!!!!  It was a long day for sure, especially with my allergies and swollen eyes and one tired toddler, but it was worth it…  We had a blast!

Yesterday (Monday), we relaxed and then had friends over for a relaxing BBQ.  Easy peasy and we had a blast!  I love having friends that you don’t have to impress, but you can relax and enjoy each others company, the kids can play, we can talk and just share life.  The kind of people that you don’t have to have a perfectly clean house for, but you just enjoy spending time with.  Ok…  you get the drift!  It was a perfect evening for me (despite both Kellie and I getting swollen eyes because of those darn cottonwood trees outside)!  ha

HAVE I MENTIONED THAT MY ALLERGIES ARE THE WORST EVER THIS SEASON!?!?!?!?!?!  I think I need to seriously have a discussion with my dr about the risks and benefits of taking Zyrtec during pregnancy.  My hubs just changed the filters in our house (they were gross)!  I am barely hanging on here, friends!

So that’s about all for my update…  Sorry for the storybook!  That’s what happens when crazy life unfolds with sickness and 3 kids and a pregnancy and THOSE ALLERGIES and…..  Happy Tuesday!  I hope you all get to enjoy the rest of your week!  The sunshine has been good to us here and I love it!

Baby Boy Name

About 8 years ago we came up with a baby boy name that we would use if we ever had another little boy…
And now we excited that we do!
We have stuck with the ‘C’ names for boys, and ‘K’ names for girls
and we are in love…  🙂
His middle name is in honor of my sweet grandpa from Italy
that we lost many years ago…
But his spirit sure lives on in me and I get gentle, sweet reminders of him everyday!
His love for me was grand, and my love for him has only grown!
He is always in my heart and I wish he could be here
right now to experience this pregnancy with me and be there when our
little guy enters this world!  🙂

Baby Gender Reveal

We are BEYOND thrilled to announce that we are having a baby

BOY!!!

We have had a name picked out for our next boy for the past 8 years and we are over the moon that we FINALLY get to use it!
I’ve felt like we have been missing this piece and we can’t wait till he arrives this fall!
Elated that our little Princess will STAY our only little Princess and
she won’t have to compete with another baby girl right now!

The boys were hoping for another brother and desperately wanted Kenley to stay their ONLY little Princess!  😉
I’m ecstatic for my husband too…  He now has his foursome complete for their golf rounds
and I can’t wait for high tea and pedicure dates with my little girl…
Who already wants her toes done on a weekly basis!  🙂

Ultrasound to follow in 6 weeks to confirm, although they say the blood test is 97% accurate!  😉

An Announcement…

Soooo…  I know it’s been crickets around here lately but for a good reason!  😉
Not only has life been VERY busy with baseball everyday for the boys,
but add in chasing a toddler around and household chores and being a chauffeur, laundry, cooking meals, errands, etc, etc, etc….
And it’s just beyond nuts!  I love every minute of it though…
With that being said:

SURPRISE,
we are thrilled to announce that we are EXPECTING another baby!!!!

So between all of those things and then throw in morning sickness, exhaustion, allergies, insomnia, etc…
I’ve been a bit of a mess lately!  ha
I’m soaking in all of the goodness and could not be more excited for a fun summer with my family,
and then awaiting the arrival of the baby in the fall!  🙂

This pregnancy has been pretty emotional for me after losing our last baby in late October/early November this past year.
A pregnancy loss is never fun, and never good timing but we lost my beloved Grandad in late October
and we found out we lost the baby the day before his funeral.
Not fun and a very sorrowful time for me.

Miscarriage is not something that people like to talk about but the pain is very real and I have yet to ‘get over it’
or stop thinking of the child that I long to see someday in Heaven.
I know that baby is in good hands and I can’t wait to hold it someday!

Pregnancy after a loss has been hard, but also very good!
I daily have to give this pregnancy to the Lord because otherwise I would worry myself to death!
Every little thing that arises gives me anxiety but I know this baby and this pregnancy is in the Lord’s hands as well
and nothing I do could ever change that!

Stay tuned for a gender reveal very soon.
We find out next week what we are having and although I have a hunch, I could be completely off!  😉
Either way, I’m thankful for this child he has blessed us with!
