This jello I told you about yesterday and is so yummy!
It’s not your typical jello, it’s fluffy and softer than the molded jello.
Almost a mix between a jello and a pudding…
You will have to try it, it’s so nommy!
Raspberry Fluff Jello
1 (4.6oz) package Jell-O Cook & Serve vanilla pudding
1 (6oz) package raspberry Jell-O
2 cups water
1 tsp lemon juice
1 (16oz) container Coop-Whip
2 cups frozen strawberries, thawed
Mix package contents of vanilla pudding and raspberry Jell-O with water and lemon juice in a saucepan over medium heat.
Stir constantly until it boils.
Remove from heat and pour into a bowl.
Refrigerate until the mixture has thickened, about and hour.
With an electric hand mixer, beat until creamy.
Then add the Cool-Whip and strawberries and beat until well combined.
Chill a few hours before serving.
We had a really fun weekend as family…
My father in law came into town to see the kids and to watch Coop’s first baseball tournament of the season.
They won the tournament which was fun for Papa to see,
and the kids loved having him here to spend time with them!
Saturday was full of baseball, and then home for a yummy dinner that I made.
Since we were gone all day,
I made some easy to throw into the crockpot and when we got home the house smelled yummy
and it was ready for us to eat!… SCORE!
I made one of my boys favorites, Cheesy Crockpot Mexican Chicken.
Sunday we took Papa to church with us…
I sat in the ‘family room’ with Kenley because she has been teething and I didn’t want to put her in the nursury.
Then we took Papa out for Mexican food at our favorite ‘after church’ place for brunch.
He got to play with the boys outside in the sunshine before heading home to Seattle.
The kids were sad he had to leave so soon.
I decided to do my weekly grocery shop on Sunday after our early dinner
and this picture popped up on my phone while shopping…
Thankful for an amazing husband who takes care of our babies for me.
So nice to do my shopping alone. ;)

Things have been nonstop busy on the homefront as of late
and I couldn’t be more happy… Or exhausted! :)
My days have been full and I enjoy being a mama and a wife so much!
Don’t get me wrong, it’s not always easy
and sometimes it’s really messy,
But I love so much where the Lord has us right now…
Even if I do have 9 loads of laundry sitting and waiting to be folded at the moment!
I will start to tackle that this afternoon while Kenz naps… with a diet coke in hand! HA
The boys have had 4 baseball practices a week, in different places and at different times,
but somehow we are managing to get them there and back and have dinner ready in the process.
All thanks to my amazing husband, that is! :)
I’m seriously not sure how I would do it without him!?!?!!
The boys started back at school this week after a really fun and relaxing Spring Break…
I’m not going to lie, it’s really nice to have them back at school…
Not for any other reason than to have the schedule back…
I like the consistency of a schedule everyday.
It helps me stay organized and everyone is happier knowing whats coming next,
if you know what I mean! ;)
I love the drive to and from dropping off and picking up from school…
It’s actually relaxing to me and it’s something I look forward to in my day!
Days with baby are long and busy… Tiring at times, demanding at others.
She is at such a fun stage now.
She interacts with us and communicates.
She gets around well and is into everything which is cute but you have to watch her at every second.
She is teething which is adorable and miserable all at the same time!
It’s gut-wrenching to see her in pain but I love that I get to snuggle and comfort her. :))
Tomorrow my hubs is watching Camden and Kenley while I go on an all day field trip with Cooper’s class.
Really looking forward to that time with him…
It’s always so fun to see your kids in their element with their friends, etc.
I also love that he still calls me mama in front of his friends and is
very excited that I’m going, instead of embarrassed.
In fact, he begged me to go on this trip… It was so cute! :)

My father in law is coming to town this weekend to see the kids

While the boys were at baseball practice the other night I got the itch to bake!!!!!!
The baby was playing happily in her jumperoo and I had finished doing the dishes and cleaning the kitchen.
I wasn’t ready to sit down and I had seen a recipe for scones I was dying to make
and it seemed like the perfect time to whip something up!
The house was quiet besides the baby giggles happening and I was basking in the goodness of God’s goodness.
So there I was, happy as a clam… I turned on a Focus On The Family broadcast
and whipped up this delicious recipe that we all loved!
I ate one warm… and then had one the next morning with a hot cup of French Press coffee…
It was pure perfection. :)
Banana Scones With Cinnamon Glaze
2 cups all-purpose flour
1/2 cup sugar
1 TBSP baking powder
1/2 tsp salt
1/2 tsp cinnamon
6 TBSP unsalted cold butter, cut into small cubes
2 small ripe bananas, mashed
3 TBSP half & half
1 cup powdered sugar”3 TBSP milk
1/4 tsp cinnamon
Preheat oven to 425 degrees.
Spray a baking sheet with nonstick spray or use a silpat.
In a medium bowl, whisk together the flour, sugar, baking powder, salt and cinnamon.
Cut in the butter with a pastry cutter until the mix resembles fine crumbs.
In a separate medium bowl, whisk together the banana, egg and half & half.
Add the dry ingredients and mix together until combined.
Scoop the mixture onto a flour ed surface and add a TBSP of flour to the top.
Shape the dough into a round mound and put it on the baking sheet.
with a pizza cutter (or a sharp knife), cut into six wedges.
Pull the wedges apart on the sheet.
Bake for about 15 minutes or until the lop is lightly browned.
Immediately place the scones on a wire rack to cool.
To prepare the icing, whisk together the icing ingredients until smooth.
Drizzle over the scones and wait for icing to set, about 15-20 minutes.

I made these last night for dinner and all of my boys (Hubs included) went nuts!!!
MY husbands favorite is pulled pork sandwiches,
so I figured with a rainy day, I’d wake up early and get something yummy going
in the crockpot so we could smell the goodness brewing ALL.DAY.LONG!!
My house smelled amazing and these little guys are easy and YUM!!
You must try this easy recipe…
My hubs said this will be his number one request during football season and for Superbowl next year! :)
Pulled Pork Sliders
1 5lb boneless pork shoulder
1 1oz envelope dried onion soup mix
salt & pepper
1 12oz can root beer (I used diet root beer)
2 cups BBQ sauce, divided
1-2 bags of potato rolls
Trim the pork roast of excess fat.
Place the roast in the slow cooker and sprinkle with onion soup mix.
Rub the mix into every side of the meat to coat it all…
In a bowl, whisk together the can of root beer and 1/2 cup of BBQ sauce.
Pour it over the roast and cook on low heat for 10 hours.
Remove the roast when down and place on a cutting board.
Let it cool for a few minutes before using two forks to shred it apart.
Pour out all of the juices EXCEPT for 1/2-3/4 of a cup.
Place the shredded pork back into the slow cooker and add the remaining 1.5 cups of BBQ sauce.
Stir well to combine, place the lid back on and cook for 10-15 minutes on high.
Split the potato rolls in half and scoop the pork onto the buns and enjoy!
We had a really fun week this past week…
Last Wednesday we went to Loveology which was fun.
Very proud of our Pastors new book out; it’s on marriage, love and sex, and what the bible says about it.

The weekend came and we welcomed the beginning of Spring Break with a fun BBQ with good friends…
The kids jumped on the trampoline, we shared a delicious meal together
and then sat around the fire and talked and made smores! :)
Kenley wasn’t feeling all that great on Sunday so when we got to church we ended up in the ‘Cry Room’,
which is like an awesome ‘family room’ for families with littles to sit comfortably and watch a direct feed of the teaching!
We actually love it in there and it’s fun to have the babe sit with us and play while we drink our coffee and enjoy the weeks teaching!
We will so blessed by our amazing church!
This week our kiddos have had the crud. Colds all around and the baby has had a low grade fever.
She is teething and my mama heart hurts to see her like this! :(
She has also had a yucky crusty and clogged up nose. Elevating her head in the crib but my poor baby girl!!!
I’m so grateful that all of my babes continue to smile while they aren’t feeling well.
I am one blessed mama! :)
The only thing worthwhile that has come out of staying in the house has been watching basketball!
March Madness has been a fun family time for us and the boys have gone bananas over some of the upsets!
It has seriously been a blast! Love that our kiddos enjoy sports as much as we do! :)

One more piece of goodness…
I was sitting on our deck the other night basking in the goodness of God’s amazing creation
and as I was praying He revealed Himself in such a glorious way!
I am always in awe of the beauty He creates all around us.
It seriously never gets old to see His amazing artwork…
Sooooo, last week for St Patty’s Day I wanted to make a special treat for my boys!
Hubby’s favorite is anything peanut butter so I wanted to whip something up that was extra special and extra yummy!
I concocted my own version of a peanut butter ice cream pie and it turned out so yummy!
In fact, it was so yummy that I’m going to make a butterfinger version for him next week…
That’s his other favorite! ;)
This was actually super easy and I’m really happy I made it…
Mmmmm…. SOOOO DELICIOUS!
Peanut Butter Ice Cream Pie
1 oreo pie crust (homemade or store bought)
1.75 quart of Vanilla ice cream (I love Umpqua), softened
1.5 heaping cups peanut butter
1 small tub of cool whip (or whipped topping) >>>> I used sugar free, softened
6 Reeses Peanut Butter cups, chopped
3 Tbsp Chocolate Sauce
Dump the softened ice cream into a large bowl and add the peanut butter.
Use a hand mixer on medium to low setting and whip it together well.
Pour into the oreo cookie pie crust and stick it in the freezer for 15 minutes.
Use a spatula to spread on the whipped topping and then drizzle with chocolate sauce.
Lastly, add the yummy chopped pieces of peanut butter cups to the top to finish it off and stick it back in the freezer for at least 2-3 hours before serving.
