Today we are headed to Bend, Oregon for a baseball tournament…
As you read this we are already on the road (and I’m already missing our dogs).
Our family LOVES road trips and we are excited to be a part of this trip and we’re looking forward to
the fun and memories we are about to experience.

I’m taking along the book

to ready and study while I’m there…  especially on the long drive.  ;)
I already started it last night and it’s going to be powerful!
My soul longs for more of Jesus and what He wants for me…

I am hoping to update this weekend but not sure if I’ll have the time…  :)

Homemade French Bread

Saturday night I made another yummy roasted pasta dish and attempted to make my first homemade loaf of French Bread.
I make bread all the time but was worried about this one for some reason…
After I searched for recipes and saw the simple list of ingredients I decided to give it a go!  :)
I’m happy I did…  Between hubby and our boys, the loaf was gone in one sitting.
Since it was hot out of the oven, we even let the boys have hot fresh French Bread with Nutella on it…  Yummy!

I’m sad to say that I didn’t get a picture of the whole loaf because my boys cut into it and scarfed it…  ;)
But here is what was left by the time we got to the Nutella…  haha

Homemade French Bread

INGREDIENTS:
3 1/2 cups bread flour
1 teaspoon salt
1 pkg active dry yeast
1 1/4 cups hot water

DIRECTIONS:
Please ingredients in your bread machine according to manufacturers directions.
Start the machine on the basic dough setting.
When finished, remove and place on a floured surface and form into a long loaf (about 16 inches)
Place on a silpat or greased cookie sheet and cover with a towel.
Let it rise about an hour, until double in size.
Preheat the oven to 450 degrees
Bake for 15 to 20 minutes or until golden brown.
I flip the cookie sheet around about halfway through to make sure both sides are even.  ;)
Let cool on a wire rack, if you can wait that long to cut and eat it…  Ours didn’t make it we loved it so much!

Rigatoni with Roasted Veggie Puree

The other night I was CRAVING fresh veggies but I knew my kiddos and hubby needed something more than just a small plate of raw veggies
so I decided to come up with a recipe that would suit their taste, and mine!  :)
My husband loves when I make anything that has to do with my Italian roots and he LOVES pasta,
so I grabbed some whole wheat pasta and went to work!
I grabbed the freshest veggies I could find and roasted them up for this delicious, hearty and healthy pasta dinner!  :)

Rigatoni with Roasted Veggie Puree Sauce

INGREDIENTS:
1 box of whole wheat rigatoni (or whatever kind you like)
3 cups cherry tomatoes
2 zucchini
1 red bell pepper
1 yellow bell pepper
6 mushrooms (good size)
3-4 cloves fresh garlic (whole cloves)
kosher salt
pepper
1/4 tsp red pepper flakes
2 cups freshly grated or shredded parmesan cheese
Olive Oil

DIRECTIONS:
In a large bowl add the cherry tomatoes.
Chope the rest of the veggies and add to bowl.
Season with salt, pepper and red pepper flakes and add olive oil to coat.
Toss together until fully coated and turn onto a baking sheet (preferably with a silpat)

Bake for 35 minutes at 400 degrees.

Meanwhile, cook the pasta according to directions and grate the cheese and set aside.
When veggies are done, add them to a blender or food processor while still hot, add a tablespoon of olive oil, and puree completely but don’t over blend.  This will be your sauce.
When pasta is done, strain but keep a cup of the pasta water in case the sauce starts to dry out.
Add the cooked pasta to a large pasta bowl and toss it with the parmesan cheese to coat.
Then add the pureed veggie sauce and toss to coat completely until well blended.
Serve hot and enjoy!  :)

Weekend Recap and a Bump Pic

Another full weekend of baseball and family time…  :)
Friday night I made a yummy pasta dish (recipe coming tomorrow) and we got to have a family night which was much needed!
Saturday the boys had baseball and hubby worked since we are about to go on vacation.
I made another yummy pasta dinner and homemade French Bread (recipe coming Wednesday)…  Totally delish!
Sunday we went to church and then went to our favorite Mexican restaurant for brunch/lunch before hubby worked again.
Coop had practice for his tournament team so I had a little time alone with Camden!!!
Love spending time with each of my boys individually and we came home and threw the ball back and forth and then we made smoothies…
So so yummy and we enjoyed each others company so much!

Pretty simple weekend but it was nice to get a little rest in…  
I looked down at my belly and realized how LARGE it’s gotten so I decided to take a pic.
Maybe it’s just me but it seems bigger and I’m getting a little uncomfortable.
My back is aching and my swelling has started…
I’m grateful for a husband who will rub my feet and dish out back rubs and not complain.  :)

It’s a busy week for us and I’m trying to get errands done and get things ready and organized before we leave town!

My baby shower is less than 3 weeks away…  Oh my goodness I can’t believe how time flies!
Our every week is filled between now and when baby is due so I’m praying the time continues to pass quickly.

I realized after my other babies that there are tons of things that you can register for, but that aren’t necessary at all.

New Worship Pastor

Have I ever mentioned how hard it is to keep a secret?!?!?!?!?!
I have known for several months now that our church, Solid Rock, would be welcoming a new Worship Pastor, Evan Wickham, this summer
but they wouldn’t be announcing it until Mothers Day this past Sunday!!
What a relief that the news is out because my family has been super excited!

My Mother’s Day Weekend

My German Apple Pancake

I had the most perfect Mother’s Day weekend!!
I spent it with my husband and boys and of course saw my parents and my Grandma.

Here is a recap of my weekend along with some pictures at the end.  :)

Friday hubs and I bought the boys new golf clubs so after school my three boys went to the golf course for a little boy time…
We also went to Babies R Us and Coop picked out a precious little Lambie for Kenley.  <3

Saturday we had a full day of baseball and then after Camden’s game the coach from the other team
planned a pizza party for everyone!  It was wonderful and generous and the weather was amazing!  :)
I couldn’t have asked for a more fun day and I feel truly blessed!

Sunday I woke up to my boys giving me tender kisses like little Prince Charmings
and they had each made some special Mother’s Day gifts at school for me to open.
It was so precious and I LOVED it so so much!
Being a mommy is the most rewarding and amazing job I’ll ever have!
We went to church and then went to my parents house to wish my Mom and Grandma a Happy Mother’s Day!
My sweet husband planned an amazing brunch for me in the afternoon at a gorgeous restaurant called
Paulee in Dundee…  Wine Country.  He knows me so well and the restaurant totally suited my and his taste to a T!!  haha
I had a HUGE German Apple Pancake, the boys had the same
and Hubby had an amazing burger with an egg on it…  His fries were to die for!!!!!!
We came home after so I could take a nap and I dreamt of apple pancakes the whole nap…
They were that GOOD!!  :)
I can’t wait to go back there for a date night to try their dinner!!!  Mmm mmm
On our way home Camden fell asleep and that to me, was the sweetest!  ;)

and I hope each of you felt very special and loved!
