Beef Po’ Boys

A couple weeks ago my boys asked for Po’ Boys…  I usually make a fun meatball po’ boy but had all of these ingredients on hand so I decided to give it a go!  Boys loved them, hubs raved about them and I’ll be making them again!  A tad time consuming but worth it for the flavor blast that oozes in your mouth when you take a bite of these babies!!!  Y’all, you have to make these ASAP!!!!!!!

 

Beef Po' Boys

 

 

Beef Po’ Boys With Southern Aioli

INGREDIENTS:
1 1/2 cups onion, sliced
1 (4-pound), beef shoulder roast
6 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon paprika
1 tablespoon chili powder
1 tablespoon brown sugar
1 teaspoon dried onion powder
1 teaspoon dried mustard powder
1/2 teaspoon oregano
1/4 teaspoon cayenne pepper, optional
2 cups beef broth
1 tablespoon Worcestershire sauce
8 10-inch long French bread loaves or Hogies, for serving
Dill pickle slices

DIRECTIONS:
Spray the inside of the slow-cooker with cooking spray.
Place sliced onions in the bottom of the slow cooker.
With a sharp knife, cut small slits into the roast and stuff each slit with the garlic.
In a small bowl, combine salt through cayenne pepper. Mix well.
Rub the spice mixture into the roast and place the beef in the slow-cooker on top of the onions.
Pour Beef broth and Worchester over the beef in the slow cooker
Cover and cook on low for 8-10 hours or until the beef is easily shredded with a fork.
Remove most of the liquid from the slow cooker and save for au jus.
Shred the beef between two forks, then set the slow cooker to ‘Warm.’
Split open a piece of French bread and slather both sides with Aioli (recipe below).
Add a dill pickle slice and fill each sandwich with a generous amount of beef and top with creamy slaw (recipe below).
Eat and enjoy!

 

Southern Aioli

INGREDIENTS
1 cup mayonnaise
1/4 cup chili sauce
1/4 cup ketchup
1 teaspoon dijon mustard
2 tablespoons minced onion
1/2 teaspoon minced garlic
1 teaspoon fresh lemon juice
1 teaspoon Worcestershire sauce
1/8 teaspoon cayenne pepper, or to taste
1/2 teaspoon Cajun seasoning, to taste

DIRECTIONS:
Mix all of the ingredients together in a medium sized bowl.
Cover and refrigerate. Best made a day ahead as it helps to marry the floors together.

 

Creamy Slaw

INGREDIENTS:
4 tablespoons sugar
3 tablespoons apple cider vinegar
2-4 tablespoons mayonnaise
1/2 medium head green cabbage, finely grated (about 2 cups)
Salt and pepper
Pinch of celery seed

DIRECTIONS:
In a large bowl, whisk together the sugar and vinegar until the sugar is completely dissolved.
Add mayonnaise and mix dressing until it is smooth and creamy.
At least 30 minutes before serving, add your cabbage.
Coat the slaw well with the mayo mixture and season to taste with salt, pepper and celery seed.
Cover and refrigerate until ready to use.

Pistachio Fruit Dip

Before we left for the long weekend I was pondering what to make for St Patricks Day Dinner.  I LOVE Corned Beef but my husband does not!  🙁  I like to make things fun for the kids with green all over and this year was no different.  We had a lot of fun!!!  The boys wore their green polo shirts with their school uniforms and I got them green 4 leaf clover necklaces to wear.  They drank green water all day and had green in their lunches.  For dinner, I didn’t force my husband to eat straight corned beef but I did make some delicious Corned Beef and Swiss Cheese Paninis…  SOOOOO good!  I made what my kids call ‘Green Fluff’ to dip our fruit in and they loved it!  It was a busy and full night so I didn’t really get much in terms of photos but here is the recipe for the fruit dip!  🙂

Pistachio Fruit Dip

INGREDIENTS:
1 container of Coop Whip
1 pkg Pistachio Instant Pudding

DIRECTIONS:
Mix all ingredients together in a bowl.
Serve with your favorite fruit (We did strawberries, pineapple, grapes)

 

This is ridiculously easy and so delish!  Store the leftovers in a covered container in the fridge.

State Basketball Tournament

We had an amazing long weekend away in Bend!  Coop had his State Basketball Tournament and my in-laws flew out from Virginia to see him play!  Made our kids weekend to see them and we are blessed they are able to come for such a short time!  It was definitely a fun  little getaway!  We love the Bend area and the smaller town feel, the AMAZING restaurants there are super cute and fun (not to mention fresh) and spending time with family and friends can’t be matched!

The boys had a rough go in the beginning of the tournament but pulled through in the end which was so much fun to watch!  The boys all had so much fun together and created an awesome bond that will be hard to break!  All of the kids on his team are REALLY good, sweet kids and they all really mesh well together…  I couldn’t ask for anything more!  It’s really really special and I can’t wait for our next get together!

The days were LONG for Kenley, because what 19 month old wants to be cooped up in a gym all day watching basketball!??!?  😉  She was a champ though and we made it through!  She really enjoyed the sunshine and the play time and life is so much fun with a toddler.  She is the princess of the family and her big brother both dote on her like none other…  Gah…  Its so so precious!!!  🙂

Slow Cooker Beef & Cheese Pasta

I made this dish the other night to take to another family from church and kept some for us to have as well.  My boys all LOVED it and asked for it again next week, so I’m hoping the other family and their kids enjoyed it as well!  We’ve got a busy week going on around here and I have every hour spoken for (literally)!  I love our little crazy life so much and I’m thankful for each moment, even the moments I am overwhelmed and want to cry, because I just love my littles so so much and I am thankful for them!  I really wouldn’t change it!  I am just learning to schedule things in…  My quiet times with The Lord, time with each of my kids, the boys crazy sports schedules, date time with my man, meals, laundry,etc…  It helps to plan so so much!  I’m really looking forward to a fun weekend away with the family for Coop’s State Basketball Tournament!  Excited to see my In-Laws and the boys are so excited to have them at the tournament…  Makes my heart so full!  🙂

Slow Cooker Beef & Cheese Pasta

INGREDIENTS:
2 lb. lean grass fed ground beef
1 yellow onion, chopped
3 teaspoons garlic, minced
15 oz. marinara sauce (homemade or jar)
15 oz. Italian stewed tomatoes
1 teaspoon basil
1 teaspoon oregano
1 tablespoon red pepper flakes
2 tablespoons Worcestershire sauce
1 beef bouillon cube
1 tablespoon sugar
Salt and pepper to taste
10 oz. frozen spinach, thawed and cooked
1 lb. rigatoni (or whatever pasta you prefer) cooked al dente
½ cup Parmesan cheese, freshly shredded
1½ cups Mozzarella cheese, freshly shredded

DIRECTIONS:
Over medium high heat, brown the beef until cooked
Drain any fat and then add the garlic and onions, cooking until onions are translucent
Remove beef and saute onions and garlic until onions are translucent
Transfer beef mixture to your slow cooker and pour in marinara sauce, tomatoes, seasonings, sugar and crumbled beef bouillon cube
Stir to mix well and season with salt and pepper to taste
Cook 6-8 hours on low
Add pasta, spinach, Parmesan and Mozzarella and stir to combine well.
Cook another 20 minutes
Dish and serve hot

Weekend Recap

What an awesome weekend we had!!!!!!!! Coop had his District Basketball Tournament and they really worked together, relied on each other, played aggressive, and were super focused and they sweeped the the entire tournament!!! I am one proud mama! Those boys worked their tails off and really deserved the trophy! They beat the #1 (undefeated) team in the league and they could’t be more excited about that!  Coop came down with a 101 degree fever somehow so I have been oiling him up and we are gearing up for the State Tournament this weekend!  Excited for this fun bonding time with our team!!!  🙂

In other news this weekend, Kenley and I did an Easter craft we saw on my friend Ruthie’s blog!  She LOVED it and had so much fun ‘paint hands, mom!’ (painting her hands) and stamping it on the clay pot!  🙂  We gave it to my parents since they love displaying the grandkids stuff all over the house!
