Baked Ziti & a Weekend Update

Hi friends, sorry I never posted the recipe I promised on Saturday, my grandpa passed away that morning and it’s been a rough few days for me. 🙁

I’m excited to share this recipe with you though…
It’s super easy and super yummy! You can always swap out the regular pasta for GF pasta, or whatever you like. You could also try ground turkey sausage or make your own pasta sauce to use. I always make a huge batch and keep some on hand. 😉
Hope y’all had a great weekend, I’m once again savoring every minute with my family. My precious kids were hit pretty hard by their great grandpa’s death but they were actually able to see him hours before he passed which was amazing and I am so thankful they got that time. It hurts even worse to see them feel that kind of sorrow and pain and I feel so helpless. Life is so fragile and you never know how long you have. Kiss and hug those you love this week and make sure to tell them that you love them. Life is short!



Baked Ziti

1 lb uncooked ground italian sausage
2 tsp minced garlic
1 Tbsp Olive oil
1 pkg ziti noodles
1 (or 2) bottle(s) 4 cheese spaghetti sauce
2 tsp red pepper flakes
2 cups freshly shredded mozzarella cheese, divided

Preheat oven to 375 degrees.
Cook the noodles according to package directions.
Brown the garlic in the olive oil in a frying pan over medium heat.
Add the sausage and cook until browned.
Once cooked, add the jar of pasta sauce and red pepper flakes and heat through.
Add the cooked pasta noodles to a 9×13 pan sprayed with olive oil.
Add the sauce mixture and toss to coat.
Add one cup of the cheese and stir to mix it into the pasta.
Cook for 25 minutes, remove the pan and add the last cup of mozzarella cheese and sprinkle on top.
Bake another 5 minutes until the cheese melts.

I serve this with breadsticks and a yummy salad full of veggies!  Enjoy!


It’s True! We Are Expecting Baby #4

It’s true, y’all!  We are expecting baby #4 in Spring 2015!!!
I’ve been a bit absent on the blog for months and it’s partly because
the exhaustion and nausea of pregnancy have hit, but also because I am staying VERY busy with my 3 kids and family
and that is most important to me!
I savor the moments with my family and I LOVE being a wife and mama!  🙂

So far my pregnancy has been uneventful (for the most part)!
We are due in May 2015 and couldn’t be more excited by such a delightful surprise from the Lord!
Yep, you read that right!!!  TOTAL SURPRISE!!!!!
We were hoping to revisit the conversation next year about having another
but the Lord obviously has other plans for our family!
I truly feel so blessed by this, and am still in shock by His generosity!

I will update about the pregnancy regularly since I obviously want to document such an exciting time!
