Banana Scones With Cinnamon Glaze

While the boys were at baseball practice the other night I got the itch to bake!!!!!!
The baby was playing happily in her jumperoo and I had finished doing the dishes and cleaning the kitchen.
I wasn’t ready to sit down and I had seen a recipe for scones I was dying to make
and it seemed like the perfect time to whip something up!
The house was quiet besides the baby giggles happening and I was basking in the goodness of God’s goodness.
So there I was, happy as a clam…  I turned on a Focus On The Family broadcast
and whipped up this delicious recipe that we all loved!
I ate one warm…  and then had one the next morning with a hot cup of French Press coffee…
It was pure perfection.  🙂

Banana Scones With Cinnamon Glaze

INGREDIENTS:
2 cups all-purpose flour
1/2 cup sugar
1 TBSP baking powder
1/2 tsp salt
1/2 tsp cinnamon
6 TBSP unsalted cold butter, cut into small cubes
2 small ripe bananas, mashed
1 egg
3 TBSP half & half

ICING
1 cup powdered sugar”3 TBSP milk
1/4 tsp cinnamon

DIRECTIONS:
Preheat oven to 425 degrees.
Spray a baking sheet with nonstick spray or use a silpat.

In a medium bowl, whisk together the flour, sugar, baking powder, salt and cinnamon.
Cut in the butter with a pastry cutter until the mix resembles fine crumbs.

In a separate medium bowl, whisk together the banana, egg and half & half.
Add the dry ingredients and mix together until combined.
Scoop the mixture onto a flour ed surface and add a TBSP of flour to the top.
Shape the dough into a round mound and put it on the baking sheet.
with a pizza cutter (or a sharp knife), cut into six wedges.
Pull the wedges apart on the sheet.

Bake for about 15 minutes or until the lop is lightly browned.
Immediately place the scones on a wire rack to cool.

To prepare the icing, whisk together the icing ingredients until smooth.
Drizzle over the scones and wait for icing to set, about 15-20 minutes.

Pulled Pork Sliders

Ohhhhhh my goodness!!!!!
I made these last night for dinner and all of my boys (Hubs included) went nuts!!!
MY husbands favorite is pulled pork sandwiches,
so I figured with a rainy day, I’d wake up early and get something yummy going
in the crockpot so we could smell the goodness brewing ALL.DAY.LONG!!
My house smelled amazing and these little guys are easy and YUM!!

You must try this easy recipe…
My hubs said this will be his number one request during football season and for Superbowl next year!  🙂

Pulled Pork Sliders

INGREDIENTS:
1      5lb boneless pork shoulder
1      1oz envelope dried onion soup mix
salt & pepper
1      12oz can root beer (I used diet root beer)
2      cups BBQ sauce, divided
1-2   bags of potato rolls

DIRECTIONS:
Trim the pork roast of excess fat.
Place the roast in the slow cooker and sprinkle with onion soup mix.
Rub the mix into every side of the meat to coat it all…
In a bowl, whisk together the can of root beer and 1/2 cup of BBQ sauce.
Pour it over the roast and cook on low heat for 10 hours.
Remove the roast when down and place on a cutting board.
Let it cool for a few minutes before using two forks to shred it apart.
Pour out all of the juices EXCEPT for 1/2-3/4 of a cup.
Place the shredded pork back into the slow cooker and add the remaining 1.5 cups of BBQ sauce.
Stir well to combine, place the lid back on and cook for 10-15 minutes on high.
Split the potato rolls in half and scoop the pork onto the buns and enjoy!

Loveology & Framily Time

We had a really fun week this past week…
Last Wednesday we went to Loveology which was fun.
Very proud of our Pastors new book out; it’s on marriage, love and sex, and what the bible says about it.

The weekend came and we welcomed the beginning of Spring Break with a fun BBQ with good friends…
The kids jumped on the trampoline, we shared a delicious meal together
and then sat around the fire and talked and made smores!  🙂

Kenley wasn’t feeling all that great on Sunday so when we got to church we ended up in the ‘Cry Room’,
which is like an awesome ‘family room’ for families with littles to sit comfortably and watch a direct feed of the teaching!
We actually love it in there and it’s fun to have the babe sit with us and play while we drink our coffee and enjoy the weeks teaching!
We will so blessed by our amazing church!

This week our kiddos have had the crud.  Colds all around and the baby has had a low grade fever.
She is teething and my mama heart hurts to see her like this!  🙁
She has also had a yucky crusty and clogged up nose.  Elevating her head in the crib but my poor baby girl!!!
I’m so grateful that all of my babes continue to smile while they aren’t feeling well.
I am one blessed mama!  🙂
The only thing worthwhile that has come out of staying in the house has been watching basketball!
March Madness has been a fun family time for us and the boys have gone bananas over some of the upsets!
It has seriously been a blast!  Love that our kiddos enjoy sports as much as we do!  🙂

I was sitting on our deck the other night basking in the goodness of God’s amazing creation
and as I was praying He revealed Himself in such a glorious way!
I am always in awe of the beauty He creates all around us.
It seriously never gets old to see His amazing artwork…

Peanut Butter Ice Cream Pie

Sooooo, last week for St Patty’s Day I wanted to make a special treat for my boys!
Hubby’s favorite is anything peanut butter so I wanted to whip something up that was extra special and extra yummy!
I concocted my own version of a peanut butter ice cream pie and it turned out so yummy!
In fact, it was so yummy that I’m going to make a butterfinger version for him next week…
That’s his other favorite!  😉
This was actually super easy and I’m really happy I made it…
Mmmmm….  SOOOO DELICIOUS!

Peanut Butter Ice Cream Pie

INGREDIENTS:
1 oreo pie crust (homemade or store bought)
1.75 quart of Vanilla ice cream (I love Umpqua), softened
1.5 heaping cups peanut butter
1 small tub of cool whip (or whipped topping) >>>> I used sugar free, softened
6 Reeses Peanut Butter cups, chopped
3 Tbsp Chocolate Sauce

DIRECTIONS:
Dump the softened ice cream into a large bowl and add the peanut butter.
Use a hand mixer on medium to low setting and whip it together well.
Pour into the oreo cookie pie crust and stick it in the freezer  for 15 minutes.
Use a spatula to spread on the whipped topping and then drizzle with chocolate sauce.
Lastly, add the yummy chopped pieces of peanut butter cups to the top to finish it off and stick it back in the freezer for at least 2-3 hours before serving.

Healthy Chocolate Chip Balls

These are YUMMERS…  And healthy also!
I make a batch every week and keep them in my fridge to munch on…
For an extra yummy treat, I make a protein shake (Shakeology) and blend these into it at the end
to make a healthy ‘blizzard!’
Seriously TO.DIE.FOR!!!!!

Third Day Concert

Last month we took the kids to the Third Day concert and we had a BLAST!!!
We were in the suite which was nice because at times I had to stand back with the baby because of how loud it was!
The boys absolutely LOVED it and it’s always so fun to watch your kids with their hands in the air praising Jesus!
We went to Laughing Planet for dinner (one of my faves)
then went to the concert.  The boys had waited so patiently for that night and it was a really great family time!

Baked Chicken Ranch Taquitos

Once again, it’s been FOREVER since I’ve blogged!
Life has been  crazy busy with 3 kids and I forgot how time consuming an infant is!  🙂
The most I’ve had time for is a little Instagram fun…
Now that baby girl is on a schedule finally, I feel like it may be time to start blogging again!

I can’t wait to post about what has been going on…  There is a ton to share.
I will keep that for the coming weeks as the past few months have been crazy busy but so much fun!

Last night we tried a new recipe…  One that my boys had begged me to make.
I figured it would be fun to make for St. Patty’s Day.
It was a hit and I’ve already had several of you ask for the recipe so I figured I must share the yummy goodness ASAP!!

chicken bacon ranch taquitos

Baked Chicken Ranch Taquitos

INGREDIENTS:
1 (8oz) package of cream cheese, softened
4 cups of rotisserie chicken, shredded (or chopped small)
1 package of bacon, cooked and chopped
2 cups shredded Monterey Jack Cheese
1/2 packet if dry ranch dressing mix
20 flour tortillas (use whatever size your family likes)
Sea Salt

DIRECTIONS:
Preheat the oven to 425 degrees.
Cover a large baking sheet with foil and lightly coat with olive oil spray.
Mix together the cream cheese, chicken, bacon and shredded cheese.
Add the ranch dressing to taste and mix.
Make sure to mix the mixture well.
Spoon several tablespoons of the chicken mixture into a flour tortilla and roll it up.
Place the taquito seam side down on the baking sheet.
Repeat until the mixture is used up…
Once finished, spray the tops with olive oil and lightly sprinkle with sea salt.
Bake them for 10-20 minutes (depending on your oven) or until until the tops are golden.
Let them cool a few minutes.
Eat them plain or serve with ranching dressing or salsa…  Or equal parts ranch dressing and salsa mixed!
