Taco Soup

Yummy autumn meal…
It’s hearty and delicious and perfect to accompany a football game!  😉

2 lb ground beef
2 cups diced onions (I use white)
2 (15oz) cans pinto beans
1 (15oz) can kidney beans
1 (15oz) can whole kernel corn, drained
1 (14oz) can Mexican Style Stewed Tomatoes
1 (14oz) can diced tomatoes
1 (14oz) can tomatoes with chiles
2 (4.5oz) cans diced green chiles
1 (4.6oz) can black olives, drained and sliced
1 pkg taco seasoning
1 pkg ranch salad dressing
Corn chips, for serving
Sour Cream, for garnish
Grated Cheddar Cheese, for garnish

Brown the ground beef and onions in a large skillet; drain the excess fat, then transfer the browned beef and onions to slow cooker.
Add the beans, corn, tomatoes, green chiles, black olives, taco seasoning, and ranch dressing mix.
Cook on low for 6 to 8 hours.
Top with sour cream, cheese, and corn chips…  And whatever else you want.  😉

If you know me, you know how much I love brownies!
I’ll definitely eat box brownies but my favorite are homemade!

This is a simple, no fuss recipe that will knock your socks off…
I promise they are just as easy as a box, and wait til you taste the difference!!!

And, onto the sweet treats…  We are eating these today during the game!  😉

L's brownies


1 cup unsalted butter, melted
2 cups sugar
2 tsp vanilla
4 eggs
3/4 cup cocoa powder
1 cup all purpose flour
1/2 tsp baking powder
1/4 tsp salt

Heat oven to 350 degrees.
Grease 13×9 inch glass baking pan.
Melt butter in medium bowl in microwave.
Stir in sugar and vanilla.
Beat in eggs, one at a time.
Add cocoa powder, flour, baking powder and salt and beat until well blended
Pour batter into pan and bake for 30-35 minutes.
Cool completely and enjoy!

He’s 9 years old, and as we drive, he tests me on my memory verses. And although I recite them without a mistake, in reality, not living them is often my biggest mistake.

Therefore there is now no condemnation for those who are in Christ Jesus.For the law of the Spirit of life has set you free, in Christ Jesus,from the law of sin and death.Romans 8:1 (NIV)

I know in my mind I’m forgiven–that because of Christ I’m now righteous and free. But why is it then, I insist on judging myself by the law … my fleshly performance-based law?

The one where I choose to fall into the trap of measuring my success by what I can do, and checking off to-do lists to try to please GodInstead of marveling at what He has already done and in who He says I am.

I focus on how I yelled, instead of teasing out the reasons for my irritation and accepting grace anyway.

I consider how my dinner plans failed, because I didn’t get to the store for the second time this week.

I observe how the dust is thick on the shutters and the floors are always a mess.

I’m constantly measuring my worth by my actions … failing to focus on what matters most: the intent and motivation of my heart. I so often fail to focus on where I let my thoughts dwell, what I allow to permeate my presence, and who I let speak into my life with love.

For those who live according to the flesh set their minds on the things of the flesh,but those live according to the spirit set their minds on the things of the spirit.For to set the mind on the flesh is death, but to set the mind on the spirit is life and peace.Romans 8:5-6 (NIV)

Oh how I want life and peace instead of death.

And I feel the death when I measure myself against my fleshly accomplishments…like I’ll never ever measure up.

And. I. never. will. And you won’t either.

But to set our minds on the things of the Spirit…this is what brings life and peace.

Oh friends, may we stop our incessant striving, comparing ourselves to others and to the unrealistic standard we create within our Pinterest-perusing minds.

Instead, may we choose to set our minds on what God says matters…

Spending time in His Word.

Surrendering to the season He has given, now.

Cultivating the fruit of the Spirit.

And loving well.

May we set our minds on the things of the Spirit and not the flesh, dwelling on whatever is  true, honorable, right and pure.

May we run to Him with our anxiety and fear,

Commune with Him,

Give thanks in all things,

And enjoy His peace that passes all understanding.

And may we live in the abundance of life and peace He longs for us to have.

Because it is waiting for us, if we choose it.

And I am praying you’ll join me in the surrender, that we will live and enjoy the beauty of all He intends.
