We creamed Nicholls State and it was a phenomenal game (even though it was a blowout)!!

The Ducks have a new fan and she is precious as can be…
She was all decked out to watch her Ducks and it was the cutest thing…  🙂
Looking forward to every Saturday when Kenley can put on one of her many Ducks outfits…

I also made some delicious Pretzel Chocolate Chip cookies…
I first had these yummy cookies at a girls night that I hosted back in January…
My friend Sheri is an awesome cook (and baker) and she made these again for me after Kenley was born…
They are the perfect combination of sweet and salty and I LOVE them!!
Too good not to share so here is the recipe…

Pretzel Chocolate Chip Cookies

INGREDIENTS:
1 1/2 cups all purpose flour
1/2 tsp salt
1/4 tsp baking soda
1/2 cup butter (unsalted) at room temperature
1/2 cup tightly packed light brown sugar
1/3 cup granulated sugar
1 egg (beaten)
1 tsp vanilla extract
1 cup milk chocolate chips
1/2 peanut butter chips
1/2 cup broken up pretzel pieces
Pretzel salt or sea salt

DIRECTIONS:
In a medium bowl, sift together the flour, baking soda, and salt.  Set aside.
In a large bowl, beat the butter and sugars together on medium speed until light and fluffy (about 2-3 minutes).
On low speed, slowly add the beaten egg and vanilla extract.
Beat to combine, scrape down the sides of the bowl.
Add the flour mixture and mix just until there are no more streaks in the flour.
Stir in the chocolate chips, peanut butter chips and pretzels.
Cover and refrigerate for an hour.

Preheat the oven to 350F.
Line baking sheets with parchment paper or use a silpat like me.
Scoop out well rounded teaspoonfuls of the dough and sprinkle with pretzel salt.
Leave about 2 inches between each ball.
bale for 10 minutes.
Allow to cool on cookie sheets for a minute or two before transferring to a cooling rack.

Baked Ziti

Another delicious recipe that was brought to us by a dear friend after Kenley was born…
It’s simple and again simply too delicious not to pass on and share!
I hope you enjoy it as much as we do…
I’ve already made it twice!  😉

INGREDIENTS:
1 (16 ounce) package dry ziti pasta
1 lb lean ground beef
1 onion, chopped
2 (28 ounce) jars spaghetti sauce (Francisco Rinaldi’s Sweet Basil Sauce)
1 cup sliced pieces of pepperoni
6-8 ounces shredded provolone cheese
6-8 ounces shredded mozzarella cheese
1 1/2 cups sour cream
1/2 grated parmesan cheese
1/4 chopped fresh or dried basil

DIRECTIONS:
Bring a large pot of lightly salted water to a boil.
Add pasta and cook for 8-10 minutes or until al dente.

In a large skillet, brown beef over medium heat.
Add onions, saute until tender.  Drain off fat and add spaghetti sauce, simmer for about 15 minutes.
Add sliced pepperoni and stir to combine.

Preheat oven to 350 degrees F.

After cooking ziti, let cool for a few minutes and then toss with sour cream.

In a lightly greased 2 quart baking dish, place about 1/2 of the pasta; top with a layer of provolone and mozzarella cheeses.
Spread on a layer of half the spaghetti sauce mixture.

Cover with the remaining pasta, cheese and sauce;
Sprinkle a layer of parmesan cheese and basil.

Bake in preheated oven for about 30 minutes or until cheese and sauce are bubbly.
Serve hot with a side salad and garlic bread!

How He Loves Us

 

I am BAWLING as I listen to this…
God’s love for us is so deep and so wide…
I can’t imagine a world without the Lord as my everything…  The core of who I am!
He sees all that I am…  And I am messy…  very messy!!!
The good, the bad and the ugly…  I fail, and stumble and fall and He is still ALWAYS there.
The cross shows us just how the Lord feels about us.
A true picture of His perfect LOVE for us…
It’s so hard to comprehend at times but we are SO loved by Him!!!
Perfect and blameless in His eyes…
He fights for us and pursues us…
Press into Him, friends; He will NEVER let us go!

Buttery Chicken

After Kenley was born we were blessed by friends and family tremendously!
They spoiled us with tons of delicious meals
and I am excited to be back on my feet and cooking for my family!!!
One of my girlfriends brought over this AMAZING buttery chicken dish for dinner
one night and we loved it so much I’ve already made it…
With plans to make it again next week!  (Thank you, Tanya!) 😉

Little did I know it is a cinch to make and perfect for any season!
You must try it out…  I know it’ll be a new favorite in your family too!

Buttery Chicken

INGREDIENTS:
Chicken breasts (I used 4 breasts cut in half)
Green Beans (I used a bag of them)
Baby potatoes, cut into small pieces (I used a small bag of them)
1 Wishbone Italian Seasoning packet (dry and unmixed)
1 Stick Unsalted Butter (cut into slices)

DIRECTIONS:
Place ingredients into pan (see picture) and sprinkle with the Italian Seasoning packet.
Cut butter into slices and place over ingredients.

Bake at 350 degrees for 1 hour

YES, IT’S THAT SIMPLE!!!!  AND IT IS SUUUUPPPEERRR TASTY!!!

Mexican Mocha Ice Blended

I have been craving Ice Blended’s (yes, still) and it’s taken FOREVER to come up with a recipe I enjoy!
I keep finding and trying recipes online and have to toss them because they are gross
and I can’t even stand to drink them…  That changed yesterday!  🙂
I decided to make up my own recipe and measure things the way I wanted and wala…  I love!!

It’s yummy any time of day and I douse it with whipped cream which makes it even yummier!  🙂

Mexican Mocha Ice Blended

INGREDIENTS:
1/4 cup cold brewed double strength coffee
1/2 cup milk (I use nonfat)
1 cup crushed ice
4-5 TBSP chocolate syrup
1/2 tsp Cinnamon
whipped cream (for topping)

DIRECTIONS:
Add all ingredients to a blender in order (except the whipped cream) and blend well.
Pour into a glass and top with whipped cream and a sprinkle of cinnamon.
Enjoy

Though You Slay Me

I had coffee with an old friend the other day and was so blessed by our time!
I love that her and I have reconnected and am so grateful for what the Lord is doing in my life
and what He is stirring in my heart!
She told me I had to listen to and watch this video and I am so glad I did!

Friends, we all NEED Jesus!
If you don’t know Him I beg of you to get to know Him!
We are lost and broken and He is the answer!
I love so much that He gave His life for us…
All of us, so undeserving yet He continually shows His pure and sacrificial love for us!

I yearn to be closer to my Father…
I am working daily on laying everything at the foot of the cross.
To know Him better, to soak in His love that He wants us all to know!
No matter what, I will worship and praise Him…
Life means NOTHING without Him, but EVERYTHING with Him.
I want eternity with my Creator…
He is with us in the good times and celebrates with us,
He comforts us in our suffering and pain…

Don’t look to what is seen in this world…  But look to what is unseen.
Don’t lose heart…
Take His truths and day by day  focus on themand study His word.
He cares for us and we need to bless His precious Name!

A Tiny Surgery

fear not

Today is going to be a little rough on this mama!!!
Kenley is getting a frenulectomy this afternoon, which I know it’s minor and it’s just a small clipping
but to a mama it is terrible…  🙁 My heart aches for the pain it will briefly inflict on my baby girl
but I know that it will benefit her in the long run!
She will feed better and will be able to latch with causing serious pain to me which I look forward to!

Although easy and small, can you please pray for us this afternoon!??
I know Kenley will be a trooper and I definitely look forward to the snuggles afterward
but in the meantime please pray for minimal pain for her,
and for the Dr performing the clipping that God will guide his hands…
And for Paul and I, as we care for our sweet girl during and after the surgery.
