His Love Is Big Enough To Cover Us

Blackberry Cobbler

My precious little boys love to play in the woods that back to our house…
They build forts, bridges across the creek, etc.

Well, on Saturday they decided to pick mommy a big bucket of fresh blackberries…  YUM!!!
They asked if I’d make them a Blackberry Cobbler and I jumped at the chance!  😉
Anything for my baby boys…  Especially if it involves baking or cooking!

I found a recipe and got the ingredients ready…  
only to look closer and realize that is was not exactly what I had in mind…
So I revised and made up my own recipe.  Haha

Here is what I came up with…
My hubby and boys loved it and I hope you will also!

Blackberry Cobbler

Blackberry Cobbler

INGREDIENTS:
1/2 stick unsalted butter, melted, plus more for greasing pan
1 1/4 cups sugar, divided
2 1/2 cups all purpose sugar
1 1/4 tsp baking powder
1/4 tsp salt
1 cup milk
5 cups fresh blackberries, rinsed
Whip cream or ice cream for serving (if desired)

DIRECTIONS:
Preheat oven to 350 degrees F.
Grease a 3-quart baking dish with butter.

In a medium bowl, combine 1 cup sugar with the flour, baking powder, salt and milk.
Stir until completely mixed and then pour in the melted butter and stir to completely combine.

Put the blackberries in a separate medium bowl and add 1/4 cup of sugar.
Stir gently to combine.

Pour the blackberry mixture into the greased baking dish and spread into an even layer.
Pour the batter on top to cover the blackberries evenly, spreading as needed.

Bake until golden and bubbly, about 35-45 minutes.

Top with whip cream or ice cream and enjoy!  🙂

Family Day

We are shocked our precious little girl has not been born yet!
Both boys were born 2 & 3 weeks early because I had Preeclampsia…
Although I wish I was holding my baby girl this morning,
I am praising Him that I am healthy!  🙂
I am at 3.5cm dilated, 80% effaced and very soft.
I have been having contractions 5 minutes apart for over a week straight which is wild
but they have assured me that baby is doing well in there!
So, if baby doesn’t decide to make her debut on her own,
we will be inducing on August 7th.
This is when my dr is on duty at the hospital so I can’t be choosey.  🙂
Please pray that she will come sooner but if not prayers appreciated that day while I am in labor
and pray for a safe delivery!
Only a week to go (sooner, Lord willing) and we are so excited!

So, in the meantime, we are enjoying spending our last days as a family of four!
Saturday we enjoyed lunch on the patio at Jefe.
I love their Enchiladas and Guacamole…  So so delicious.
After, we headed down to the lake and walked around and had Salt & Straw ice cream…
Another one of our favorite things!  🙂

After, we came home and relaxed while the boys played outside and then hubby
BBQ’d some delicious steak for din din.

Sunday was another relaxing day…
Hubby showed houses in the afternoon,
church was amazing as usual and it was a pretty amazing, lax day in our house.
Taking advantage of these moments where I can sit in silence with my feet up…
I continue to hear the Lord whisper ‘Be Still’ everyday
and I’m trying to be patient in my waiting for Kenley to be born and really soak in the face of Jesus!

I know He is first and foremost in my life and I don’t want anything to take His place.
It’s hard in the busy moments and trying to get things done
but I know this is His will for us!

Praying that all of us take a little time everyday to seek His face
and His will for us…
Be still in His presence and let Him lead us…
I know for me, I want Him to write out my story…
More of Him, and less of me.

Greek Pearl Pasta Salad

Last week I was craving Kalamata Olives so I decided to make a meal out of it.
Being 9 months pregnant I wanted something easy, but healthy
and didn’t want anything that would have me on my feet in the kitchen for long.

I made it in the morning and let it sit in the fridge all day and absorb all of the delicious flavors.  🙂
It was so yummy…  A new favorite in our house and something I’ll be making on our trip next month!

Greek Salad

Greek Pearl Pasta Salad

INGREDIENTS:
1 box of Acini De Pepe Pasta (Italian pasta), cooked al dente according to package
1 jar Kalamata Olives, cut in half
1 cup cherry tomatoes, cut in half
1 red bell pepper, chopped
1/2 cucumber, chopped
1 cup feta cheese (or more if you like)
2-3 TBSP olive oil
Fresh ground pepper
Basil leaves (I actually used dried b/c I didn’t have fresh)

DIRECTIONS:
Cook pasta according to directions.
Strain and run under cold water so it stops cooking.
Meanwhile, while the pasta is cooking, chop all of the veggies and place in a large bowl.
When pasta is cooked and cooled, pour into bowl with prepared veggies and stir to mix.
Add Olive Oil, pepper and Basil leaves and stir to coat.
Cover and let sit in the fridge for at least 4 hours to really let the flavors come together.
Add feta just before serving.

Peanut Butter Pretzel Bars

We had friends over for a BBQ last week and I needed a dessert to make…
I was feeling like trying something new and I found a recipe that sounded interesting 
and gave it a try.  It was super simple, a bit messy and I wasn’t really sure about it at first.
Everyone loved it and I promised I’d add the recipe to the blog…
My boys have asked for it several times and I will slowly get through the batch of bars…
They aren’t super healthy but the good news is that they keep well in the freezer so I can grab a piece as wanted/needed!  😉

On another note…  I was on watch all weekend as some things arose with my pregnancy.
I didn’t do a whole lot as I was told to keep my feet elevated and stay out of the heat until my appointment today.
So…  tomorrow I should have a baby update…
And I’m praying she will be here this week (Lord willing)!!!!  🙂
Can’t wait to share her with all of you!!

Peanut Butter Pretzel Bars

Peanut Butter Pretzel Bars

INGREDIENTS:
Nonstick cooking spray
2 cups creamy peanut butter (not the natural kind), divided
3/4 cup (1 1/2 sticks) Unsalted butter, softened
2 cups powdered sugar, divided
4 cups broken pretzel twists
2 cups semi-sweet chocolate chips, divided

DIRECTIONS:
Line a 13×9 glass baking pan with foil leaving an overhang on the sides.
Lightly spray foil with nonstick cooking spray.

Beat 1 1/4 cups peanut butter and softened butter in a large mixing bowl until creamy.
Beat in 1 cup of powdered sugar at a time and then add 3 cups of pretzel pieces and 1/2 cup chocolate chips until mixed.
Press evenly into the prepared baking pan.
Smooth the top with a spatula.

Microwave the remaining 1 1/2 cups of chocolate chips and 3/4 cup of peanut butter in a medium, uncovered bowl for 45 seconds.
STIR.  Microwave at 10 second intervals if it needs more time to melt the chips.
Stir until they are just melted and mixed and spread evenly over the powdered sugar mixture.
Sprinkle with remaining pretzel pieces, pressing down lightly so they stick in the chocolate.
Refrigerate for 4 hours (at least) or until firm.
Cut into pieces.
Store in a covered container in the refrigerator.
You can also store them in the freezer…  they keep really well in there!!  😉
