Duck Baseball

Last Sunday we took the boys, along with some friends and headed down to Eugene for the U of O Duck Baseball game and it was sooooo much fun!  The boys all enjoyed hanging out with each other, receiving high fives and nice words from the players, etc, the hubbys enjoyed each others company while watching the game and I, of course LOVED hanging out with Erin and having a little girl talk while we watched the Ducks beat Arizona 7-6!!  It was a super relaxing day and both of my boys fell asleep on the way home!  🙂 When we got home we had dinner, the boys went outside and played for a bit and were both in bed at 7pm (on their own) and asleep by 7:15pm.  It was precious!!!  Hubs and I enjoyed a ‘Date Night At Home’ and snuggled on the couch and watched Zero Dark Thirty.  Such an amazing day!

Happy Saturday, friends!!!

Yesterday was an amazing day at the coast and I can’t wait to post pictures this next week!  Today is a day full of baseball and celebrating our good friends sons 1st birthday followed by a BBQ and early to bed!  Excited for Easter tomorrow!  God is so good!  🙂

Chicken Divan Casserole

Chicken Divan

INGREDIENTS:
1 (10 oz) pkg frozen chopped broccoli
2 large chicken breasts, boiled and chopped
2 cans cream of chicken
1/2 cup mayo
1 tsp. lemon juice
1/2 tsp. curry powder
1/2 cup shredded cheddar cheese
1/2 cup bread crumbs
2 tbsp. butter, melted

DIRECTIONS:
Grease a large glass pan with margarine.
Place the broccoli evenly on the bottom (still frozen).
Salt and pepper the broccoli.
Mix the chicken soup, mayo, lemon and curry until combined and then mix in the chopped chicken.
Pour the mixture over the broccoli.
Sprinkle the cheese over.
Spread the bread crumbs on top and drizzle with melted butter.

Bake at 350 degrees for 25-30 minutes.
Serve over rice.

I usually serve it with a salad and then cut up some fruit also…  So yummy…  And EASY!!  🙂

It’s A………….

Last week we finally found out the gender of Baby J!!!!
We waited until Friday evening to tell family and I had to try and dodge my moms phone calls
and avoid her at all costs or I may slip and tell her the gender!  🙂
We went out to dinner and I wrapped up a little gift for my mom and dad to open
that would reveal what Baby is…  🙂

Saturday evening I went out for a Girls Night to celebrate a friends birthday and everyone insisted
I spill the gender and since EVERYONE of my dearest girls was there I decided to spill
and I’m so happy I did because I seriously couldn’t hold it in any longer!  🙂

Now FINALLY I get to share with all of YOU friends in my
Blog and Twitter world!!!!!  I adore you all and am so blessed my your friendships and prayers!  🙂

It’s true…..

After having our two incredible and amazing boys, we are being blessed with a BABY GIRL!

We are so excited and can’t wait for this next chapter come summer time, only a few short months away!!!  🙂

Loaded Baked Potato Soup

Crockpot Baked Potato Soup

INGREDIENTS
1 30-ounce bag frozen, hash browns
3 14-ounce cans of chicken broth
1 can cream of chicken soup
½ cup chopped onion
½ teaspoon ground pepper
1 8-ounce package cream cheese

DIRECTIONS
To make the soup, combine hash browns, chicken broth, cream of chicken soup, onion, and pepper. (I just whisked everything up right in my slow cooker)
Cook on low heat for 6-8 hours (I do 8).
During the last hour of cooking add in the cream cheese.  (DO NOT use fat free cream cheese.  It won’t melt smoothly.)

Serve the soup garnished with your favorite baked potato toppings like cheese, bacon, and green onions.
