Vacation Pics

So far our vacation has been amazing!!!
We are soaking in the sun, spending tons of time together,
we’ve visited with friends, I’ve cooked and baked,
enjoyed reading a new book, and my list goes on…
Here are a few pictures I’ve taken since we’ve been here!

Thankful Thursday & a Recipe

Top 10 Things I’m Thankful For Today

1.  My amazing family and the fun time we’ve spent together re-connecting and bonding on this fun vacation.
2.  The hot sun the Lord has shined down on us while we’ve been here.
3.  The air conditioning, pool and cold water misters off the back of the house to help us stay cool.  🙂
4.  Friends we’ve re-connected with that we don’t get to see very often.
5.  No stress in the world~ Grateful that I just get to pour into my family and cook and hang out and just be together.
6.  Being able to relax with a good book!
7.  An amazing place to stay whenever we want.
8.  My precious dogs who snuggle me all the time.
9.  A life full of love
10. Jesus, who died on the cross for my sins when I’m so not worth that brutal pain He took in my place.  Thankful that I get to spend eternity with my Heavenly Father!  🙂

Apart from Me you can do nothing.’  John 15:5

Monday we had some old friends from Biola over and we had an amazing time!  The kids all played so well and loved every minute with each other and I got to sit and have girl time with Kelly and chit chat.  I had a blast and wish we got to see them way more often…  Makes me miss living down here in SoCal so much!!!  🙂

We BBQ’d turkey burgers for dinner and Kelly made some delicious Peanut Butter Balls for desert!  I had to have the recipe so Kelly so graciously shared it with me…  Here it is…  They are super easy to make and absolutely decadent!

Peanut Butter Balls
1 cup creamy peanut butter
1 stick of unsalted softened butter
2.5 cups powdered sugar
1 cup chocolate chips (approx)

Mix first three ingredients together.
Form into small balls and place on a large cookie sheet.
Freeze for about 30 minutes.
Melt chocolate chips in a bowl for increments of 20 seconds, stirring after each.
Use a spoon and pour over the top of each ball.
Top with an m&m, several m&m’s, Reeses, chocolate chip, or whatever you’d like!!

Recipe: Crockpot Chicken & Dumplings

When I found this recipe on Ruthie’s blog I thought it was way to good to be true!
My family loves Chicken & Dumplings and when I normally make them, it takes hours and hours
so I must say I was very skeptical of this until I tried it!
Yes it’s been hot outside, but who can resist yummy Chicken & Dumplings?
Obviously not me, so I gave it a go and I’m really glad I did!

Easy Peasy Crockpot Chicken & Dumplings

Ingredients
4-6  large boneless skinless chicken breasts
2 tbsp butter
2 cans cream of chicken soup
1 (15 oz) can chicken broth
1 medium onion diced
1 tbsp dried parsley
6-8 refrigerator biscuits (I used Philsbury Jumbo Flaky biscuits- the whole can)
1. Put chicken (uncooked) in the crockpot
2. Add butter, cream of chicken soups and chicken broth and stir to combine
3. Add the onions and parsley, stir again
4. Cook on low for 4-6 hours (depends on your crockpot) stirring occasionally and shredding the chicken as it cooks
5. 1 hour before you plan on eating, cut the raw biscuits into fourths and add to the crockpot. Cook on low for the last hour.
**** In my opinion it was a tad too thin so I added a teaspoon of cornstarch to thicken it up a bit!  Turned out amazing!

Baking fun

A little baking inspiration…
Tomorrow I plan on baking up some delicious cupcakes…
I’m thinking Chocolate Cupcakes with Salted Caramel Frosting!?!
Can hardly wait to get my hands on them!  🙂
We have some friends coming to visit us this afternoon that we haven’t seen in a year…
Excited to be back in SoCal on our old stomping ground…
Very excited to see them and catch up!

So far this trip has been amazing…  Very relaxing and and having so much fun with my family…  Loving the hot sun.  God is so good!  🙂

zinc inspired letters

I ran across a very old post from Sugar & Charm Blog and I must say, although it’s an oldie, it’s most definitely a goody!!
I found this ‘do it yourself’ craft very simple and I can’t wait to try it out when I get home!
Don’t you think it makes such a statement?  I LOVE it!!  🙂

Supplies:
Black acrylic paint, Folk Art pearl paint, cardboard letters and a paint brush.

Directions:
Paint the letters all black and let them dry. Then dip your brush into the pearl paint and use long strokes to paint over the black. This silver coat will give it the texture and depth it needs to look like a matte metal. Let that coat dry and hang them wherever you want!

Living For Christ

LOVE GOD PASSIONATELY AND ROOT YOURSELF IN HIM EVERY DAY!

Vacation

Today (ok, in 1 hour) we’re leaving for vacation…  I was up packing late last night and I’m up early preparing this morning and I am so excited!  Lots of things going on lately that I haven’t shared…  For one, being that we are headed out of town but you may have guessed with my last couple of posts this week, and two, I passed my State Board test on Monday (Praise, Jesus!!).  I have been a bit stressed recently with finishing up classes and hours of studying so I am very ready to relax and spend some uninterrupted time with my precious family.  Life gets so busy and we forget sometimes to just slow down and take a minute to reflect and enjoy each other.  I will be posting some updates but will save the photos for when we get back unless I decide to pack the cord to upload the photos but Lord knows I’m not good at that stuff!  We’ll see, I’m sure my precious hubby will want me to be able to blog and write or I may go cray!!  😉

Hope you all have an amazing last couple of weeks before our babies start school again!  Summer has flown by but I’m ready for the schedule and routine that comes with the school year.  I’m a planner through and through and my family thrives best on a schedule.  Hope y’all have an amazing weekend!

My Vacation Essentials
